Vineyard: Old vines, over 50 years old, mainly from the Megalochori area.
Winemaking: Fermentation in stainless steel tanks at controlled temperatures. Use of wild yeasts to express the varietal characteristics. Long fermentation for 2 months and aging on full lees for 6-8 months.
Tasting notes: Aromas of stone fruit and yeast accompany the typical salinity and minerality of Assyrtiko. Full-bodied, creamy texture, high acidity and a long finish.
Food pairing: Seafood, large fatty fish, and white meat with creamy sauces
Aging potential: over 6 years
Alcohol: 14%
