Vineyard: Old vines, over 50 years old, from Megalochori, Akrotiri and Pyrgos.

Winemaking: Fermentation in stainless steel tanks at controlled temperature. Use of wild yeasts to express the varietal characteristics. Long fermentation for 2 months and aging on fine lees for 6-8 months.

Tasting notes: Aromas of citrus, lemon, pear and peach accompany the typical salinity and minerality of Assyrtiko. Full-bodied with high acidity and a long finish.

Food pairing: Seafood, large fatty fish and white meat with creamy sauces

Aging potential: over 6 years
