Vinification / Aging: Fermentation at graded temperatures using the red wine method, meaning it remains with the grapes during fermentation for 14 days. Fermentation started naturally without the addition of commercial yeasts (wild fermentation), then aged for 3 months in French oak barrels with lees and bottled without any additives.
Tasting Characteristics: Earthy and complex with aromas of dried fruits like walnuts and toasted almonds, dried fruits, citrus marmalades, acacia honey, tea, and spices.
Aging Potential: Ready to drink.
Food Pairing: Pairs well with salads, velvety soups, white meats, and an ideal pairing is caramelized pheasant in the oven with celery puree.
