Vinification / Aging: Cold extraction in a controlled environment, alcoholic fermentation at graduated temperatures. The wine remains on its lees with periodic stirring and 12 months of aging in selected new French oak barrels with "moderate" toasting.

Tasting Characteristics: Complex bouquet with characteristic aromas of red/black fruits, spices, dried plum, tomato, leather, and mushrooms. Full-bodied on the palate, with excellent phenolic potential, balanced acidity, well-selected delicious tannins, and a long finish. A wine with great aging potential.

Aging Potential: Ready to drink and with potential to age for another 5-7 years.

Food Pairing: Pairs with rich grilled or cooked meats, mushrooms, yellow cheeses, and soups.

Serving Temperature: 16-18°C
