Vineyard: Mavrotragano is the main red grape of Santorini, which was almost extinct a few years ago. Vines can be found scattered throughout the island. It is a highly dynamic variety, characterized by very good aging potential.

Winemaking: Classic red vinification with 4-day cold maceration. Fermentation in stainless steel tanks with extended extraction, followed by daily pumping over. Matured in French and American oak barrels (1st-3rd use) for 12 months.

Tasting Notes: Concentrated aromas of black fruits, herbs, and sweet pepper. Elegant full body with high acidity and velvety tannins.

Food Pairing: Red meat, game with spices and pepper, aged cheeses.

Aging Potential: over 10 years
