It is a widely used spice. It is used to season meats (mainly dark): beef, game, lamb, rabbit, but also poultry and fish. Thyme goes perfectly with legume dishes. A pinch of this spice added to bean soup, pea soup or baked beans will significantly enhance the flavor of these dishes. Thyme is also recommended for baked potatoes, sauces, soups, and stews. It enhances the taste of pâtés and meat stuffings. It is also used in marinades, herbal vinegar, and for pickling and marinating cucumbers.
Thyme removes the specific smell of sea fish. Therefore, before baking whole fish, it is advisable to add a sprig of fresh or a pinch of dried thyme inside. Sea fish fillets, on the other hand, should be rubbed with thyme and lemon balm. Thyme is an indispensable spice for fatty and heavy-to-digest dishes.
