Our lightly buttered, paper-thin phyllo dough is skillfully rolled by hand, not too loose - not too tight, layer by layer, to evenly wrap the fillings of our recipes and ensure they bake into a perfect, aromatic blend.

Compared to traditional phyllo sheet layering on a baking pan, rolling is a much more delicate process. Mastering it takes time and effort. For the masterful production of 50,000 handmade baklavas daily, a dedicated team like ours is certainly needed.
