According to Mr. Andreas Thomopoulos, a well-known Greek endocrinologist, diabetologist, and dietitian, halva has significant health benefits, such as acting against hypertension and aiding the proper functioning of the immune system.
In our daily diet, we can combine halva with yoghurt and fruit, or wholemeal pancakes.
According to experts, the combination of halva with fresh or dried fruit and wholemeal bread is part of a balanced diet: it strengthens the body and adds energy.
FOR THE HEART AND MIND:
Sesame contains B vitamins, phosphorus, and polyunsaturated fatty acids, which contribute to better heart function.
Thanks to its iron content (which prevents anaemia), calcium, and other precious metals and minerals, it helps in the proper functioning of metabolism and strengthens bones.
Halva is also a source of fibre, which lowers bad cholesterol (LDL) levels in the blood and aids digestion.
Sesame contains natural antioxidants, vitamin E, and selenium, which help fight free radicals that accelerate skin ageing.

Ingredients: Sesame, sugar, glucose syrup, vanilla.
Depending on the flavour, additional ingredients: almonds, cranberries, chocolate, cocoa, biscuit.
The traditional method of preparing halva is quite difficult:
1. Rinsing the sesame is done with physiological saline, which removes all foreign bodies from the sesame seeds, which are then collected in special baskets.
2. Later, it is rinsed 2-3 more times to remove any remaining salt.
3. Roasting takes place in a special "psistiria" tube, where special "wings" move the sesame to prevent it from burning.
4. Tahini (sesame paste) is prepared from the roasted sesame using millstones, which is then placed in a semicircular copper vessel called "pasimi".
5. Separately, sugar is boiled with water until it reaches a caramel consistency, to which (after reaching 115 degrees) the previously prepared sesame "tahini" is added.
6. Then, the worker puts on special canvas gloves, reaching above the elbows, and begins kneading the "dough".
7. Kneading is particularly difficult because the mixture's temperature is around 80 degrees, very difficult to bear and requiring skilful handling and great patience to achieve the best results in halva quality.
8. Kneading the halva takes about 30 minutes, after which the still-warm halva is hand-weighed and packaged.
